Debit is dry white wine produced by Alen Bibić of Croatia's Bibich winery in Northern Dalmatia from this indigenous white Debit grape native to these hills. Rumor has it that it got the name Debit from the French. During the Napoleonic wars the poor peasants had nothing to pay the soldiers off with except their wine, thus the name 'Debit'. Likely a relative of Italy's Trebbiano grape it has a similarly mild character. As with Trebianno, when planted to vigor reducing sites where yields are kept intentionally low it produces wines with incredible mineral depth, elegance and restraint. The 2009 vintage was made exclusively in stainless steel and so is called INOX (what wine makers call stainless steel tanks). Using a premium selection of grapes from both Alen's personal vineyards and those of his neighbors under contract the fruit was quickly sorted, pressed and kept cool to protect the fruitiness of the wine. After fermentation the wine was allowed to settle, racked, gently filtered and bottled fresh. Best served at 57F with white fish, lobster, spicy chicken, or simply, as an aperitif, it has aromas of lemon curd and fresh cut herbs with a gentle yeastiness and a soft, glossy finish. Drink now
