Kabaj - Amfora - 2005

Amber in color, its distinctive perfume of dried fruits, tea leaf, smoke and earth, its fine tannic texture, and its longevity, make Amfora a most remarkable wine experience. It was made by an ancient technique, wine maker Jean-Michel Morel learned while studying Georgia’s primitive wine culture. Hand harvested in late September from the vineyards of Belo, Belo-vhr, Ravan and Šlovrenc, only the best fruit is used. After de-stemming, the grapes are poured, skins and all, into buried 3500 liter clay Qveri (Amphora). Each variety is treated separately. During the wild fermentation the cap must be constantly punched down. After fermentation is completed the Qvevri are sealed shut for 10 months. Slowly the skins, seeds, juice and lees, separate. This allows the wine to be cleanly racked out of Qvevri and into the oak tanks, where it is blended and aged for an additional 12 months. The final blend is 60% Rebula and 20% each, Tocai Friullano and Malvasia, with minor adjustments vintage to vintage. After filtration, the wine is bottled and allowed to rest for a year before release.

Even young Amfora behaves like something properly aged and evolved. Pefumed rather than aromatic, the scent alone requires ones full attention. Deep, textured and slightly tannic it is unusually food friendly, but is best enjoyed with something equally exotic. Currently, we offer 3 vintages of this exceptional wine. The most harmonious and ready to drink, is the 05’, 06’ is the winemaker’s personal favorite, and 07’, still very young, is the most boisterous.
