This is a very special wine, a Chardonnay like no other. It comes from Austria's Sweet Wine Paradise Illmitz, located at the shallow waters of Lake Neusiedl at the border to Hungary. This area is one of the few in the world where gorgeous late harvest wines can be produced year after year because of the reliable humidity that's everywhere in autumn. This creates the perfect conditions for the famous noble rot or botrytis to do its magic on the grapes. It's kind of a fungus similar to the one which creates the wonderful complex flavors in blue cheeses. Here it is responsible for the explosion of flavors the grapes contain on top of being extremely hydrated and concentrated almost like raisins.
