Our Notes: Ambra is a sweet wine made in the style of Dalmatian Prošek. Typically produced from white grapes much in the same style as the more well known Italian Passito wine and Vin Santo. Hand picked late harvest and partially dehydrated grapes are either dried indoors or on straw mats. Ambra is then made from healthiest bunches from this selection and carefully crushed and aged for years in small oak cask. Non vintage Ambra is blended yearly from barrels as they become ready. Heavy and smooth in texture with notes of burnt toffee, caramel, spicy Tobacco and a distinctive Rancio twist, it’s not necessarily a “dessert” wine, but rather for anything pungent in flavor. Alen prefers fresh roasted nuts, blue cheeses and rustic preparations of paté.
