Whereas Beerenauslese and Trockenberrenauslese wines are special due to noble rot, eisweins freeze right on the vine without any and retain remarkable freshness and varietal character. Harvested at night at a minimum temperature of -7°C, the water in each grape freezes and only the sweet fruit is then pressed out. Grüner Veltliner is particularly suited to this kind of production because of its thick skin. The best eisweins are also picked on the year’s first freeze - thawing out and refreezing produces off putting flavors. 2010 was perfect and picked under clear skies directly beneath the Orion constellation. Baked apricot, gingersnaps and Grüner’s trademark flavors of white pepper and salt.
