Our Notes: R5 is one of the most unique Bibich wines. Very much a cellar cuvee (%15 of the 2010 is blended into this bottling) it is also echoes back to a time prior to the advent of stainless steel and refrigeration - building oxidation into the wine rather than having a wine oxidize. The native Debit, Pošip, Maraština dominate the blend, but the exact content and proportions vary. Vinified in new and used American Oak oxidatively for a year, it is typified by aromas of browned butter, hazelnut and Mediterranean herbs. Despite the sherry like aromatics, it’s remarkably bright and integrates seamlessly with the spicy oak. Textured and harmonious, it makes a perfect companion for briny Brodetto, deeply seasoned poultry and anything with sage and brown butter.

93 Points Wine & Spirits Magazine Alen Bibić's vineyards are in Skradin, about five miles inland from the Adriatic coast. You can taste some sea salt, in fact, in R5, a blend of debit, pošip and maraština with a little pinot grigio and chardonnay—plus a splash of 2010 wine. It comes together in a big wine, rich and broad, with a warm, nutty richness and honeycomb tones. Emphasize its elegance and complexity by decanting it, or, if the American oak is too forward for your tastes, cellar it for another five years to serve with scallops in browned butter.
