Saperavi is the most planted workhorse red in Georgia and can be found in Russia, Moldova, Armenia, Azerbaijan, Bulgaria and recently, Australia. Drought tolerant, dark skinned, high acidity, tannic, and incredibly age worthy, it can be bright young wine, aged for years in clay Qvevri, and makes exceptional off dry wines as well. This 2012 was fermented in stainless steel and then spent 3 months in Georgian oak barrel before bottling. Saperavi also means “dye” in Georgian because of it’s deep color and this wine is no exception despite being fairly light in weight and alcohol. This is the beauty of Saperavi, it has grip, acid and pungency without being overripe or too high in alcohol — the perfect dinner party wine.
