Our Notes: Dark and brooding with intense earthiness. This saperavi was aged for almost 10 years buried in the earth right outside the church. Take a sip, close your eyes, and you will feel transported to another time and place. Pairs perfectly with most meat or mushroom based dishes. Try with richer, creamier cheeses.

92 Points Wine & Spirits Magazine: Restored in 1992, this medieval Georgian Orthodox Monastery began producing wines in 1998, usinf traditional techniques. For this wine, the grapes are foot-trod in wooden troughs and the juice is fermented and aged in qvevris that have been sealed with beeswax from the monastery's own hives. After nearly ten years in qvevri, this saperavi seems to be starved for oxygen, the initial scents funky and black. But give it a few hours in a decanter, or a day to open, and the charcoal-like scents turn toward black raspberries and cumin, with a woodsy, cedar-like note. The acidity is also remarkable, bright and vivid, making the wine a fresh and versatile choice at dinner.
