Our Notes: After dropping quite a bit of fruit from the marl heavy Brajda vineyard, the Pinot Gris was harvested in the afternoon to avoid the morning dew. Fermented with the grapes’ own yeast, racked once during the Old Moon, and then matured for one year in Slovenian oak barrels. This wine is still very much alive and will really open up given the opportunity to do so. Traditionally paired with cheese, smoked fish, and seafood accented risotto, the combination of weight on the palette, grip and acid make it fit for the table.
