Kakheti's most traditinal examples are made in massive buried clay vats called qvevri, an ancient method that tempers Saperavi's powerful nature and lends the wine a rich, velvety texture. After being fermented in qvevri, the wine is aged in French oak barrique for 12 months. The clay doqi wine vessel symbolizes the tradition of hospitality at the Georgian table.
